As a millennial, I am embarrassed to say that I didn’t watch Gilmore Girls growing up. I saw a couple episodes here and there by mistake or when nothing else was on but I was definitely not as devoted as my peers. Fast forward 10 years and I am on that train like no other!! It’s awesome because it’s now readily available whenever. It sucks also because we binge watch pretty much every night. And by ‘we’ I mean my husband got lured in and now he’s on the train with me. It started off as an innocent “there’s nothing else to watch on Netflix so let’s give this a go” which has turned into a 3 episodes a night kinda thing. Ok so not quite binge watching but close.
This weekend we had a major Gilmore Girls party complete with this Chicken Chili and Thyme Casserole. It just so happens that this comfort food dish pairs extremely well with series watching. Living in Ho Chi Minh limits ones ability to cuddle up on the couch. TV watching and sleeping normally involve a fair amount of distance between two people here. But every once in a while we like to turn the air-con temperature really low (I know, super eco-riendly right?), wrap up in a light blanket, decrease our proximity, eat comfort food and binge watch tv series. Wild.
Anyway…here is the recipe. Grain-free. Dairy-free. Nutritious. You’re welcome.
- 500 g ground chicken
- 1 tsp coconut oil
- 1 medium onion diced
- 2 cloves of garlic minced
- 3 medium tomatoes diced
- 1 medium red bell pepper diced
- 1 medium green bell pepper diced
- 3 sprigs of thyme (remove leaves from stalks)
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1-2 tsp salt
- black pepper taste
- 3 eggs whisked
- Thyme sprigs to garnish
- Preheat oven to 180 deg C or 400 deg F
- Fry onion in coconut oil until translucent, add garlic and cook for a minute
- Add chicken along with the herbs and spices and cook until no longer pink
- Then add the tomatoes and cook until soft
- Add the remainder of the ingredients (excluding the eggs and thyme for garnishing) and cook for a few minutes
- Grease a casserole dish and place the chicken mixture inside
- When cooled slightly pour over the whisked egg and shake the dish gently to spread the egg around the dish
- Garnish with sprigs of thyme
- Bake for 45 minutes to one hour or until golden brown
